Dario Sorrenti

Dario Sorrenti is the founder and creative soul of the Baccalameo project. His passion for cooking comes from a deep expressive and communicative need; since he was young, he has used cooking to create authentic connections with people.

For Dario, food is an actual language. That’s why he turned his passion into a profession, combining study, research, and training to bring his entrepreneurial project to life: Baccalameo — a warm, welcoming, and coherent place where ingredient quality, the perfect blend of tradition and innovation, and the Italian ritual of eating and sharing are at the core.

Dario defines his style as “credible”, simple but impactful, based on the honesty of Italian cuisine revisited with international touches, but always maintaining a strong identity.

His approach is not just culinary but emotional and relational; this is why Baccalameo is where cooking and emotions blend together, creating a personal and unique concept.

THE ORIGIN

The History of the Name “Baccalameo”

The name “Baccalameo” comes from an affectionate expression that Dario and his family have always heard his father repeat.

In the family, his father called his children and grandchildren pet names like “baccalà me” or “baccalà meo” — a tender and funny combination of Neapolitan and Sicilian.
• In Neapolitan, Baccalà is used affectionately to mean “idiot” or “stupidotto”.
Mea/Meo in Sicilian means “mine”.

Combining the two expressions, “Baccalameo” is born: not just a name but a piece of heart, of family, of experience, a name that tells of tenderness, humor, and roots.
